Tilapia Tuesday

Hey everyone! Show of hands, who can't stand those dumbass McDonald's fish sandwich commercials where all they say is "Fishy, Fishy"? Except that they pronounce it "Fishaaay, fishaaay", which could NOT annoy me more. End rant.

So dinner last night was fairly simple, no real recipe needed. I am trying to get rid of stuff from my freezer before I go shopping again and I had some tilapia fillets in there that I figured I could make.

This could have worked out one of two ways: Broiled or "breaded" and pan fried.

I opted for broiled for last night's dinner. I wasn't sure what time the man of the house would be home, so I decided to do things the easy way (yet again :-)) I got my fish at the supermarket for $14.99 a bag containing about 10 individually wrapped fillets. I really like tilapia, because it doesn't have a strong taste at all, which suits me to a T. I'm not a big fan of fish, but meat and chicken can get kind of boringly repetitive sometimes.

Not much to say in terms of recipe: Defrost your fish and rinse it under the faucet before you decide to use it. Pat it dry and add your seasonings. I went with cajun seasoning, garlic powder, salt, pepper, and oregano. Pam up your baking pan or cookie sheet and put your fish in at 375 degrees for about 15 minutes each side. Donezo.

I also found a couple of bags of whole green beans in the freezer so I popped those into the microwave and added lemon juice, olive oil, oregano and a dash of garlic powder when they were done. (I tend to use a lot of frozen veggies because everyone in this house has different dietary wants and needs, and I don't have a lot of refrigerator space to be taken up with fresh stuff. By all means, feel free to use fresh veggies for all of this, though.)

That's it. Simple, light fare that cost about $15.00 (for 8 fillets and two bags of green beans -  I wound up making some more in case the hubby came back hungry :-)) I am probably going to wind up having the leftover green beans for lunch today, too.

You can use any type of fish for this, really. Whatever suits your taste buds :-) Just make sure you adjust your cooking time for the type of fish you are using, as well as the thickness of the pieces you are baking. I'll post the recipe for the "breaded" version of this meal at some point next week.
